St Louis Ribs
These are my favorite type of ribs. They are much meatier than back ribs and have more delicious pork flavor.

St Louis style pork ribs smoked on a pellet grill

- Smoker
- Thermometer

Ingredients
- 1 Rack Pork Ribs St Louis style (center cut spare ribs)
- 4 tbsp BBQ Rub
- 4 tbsp BBQ Sauce
- Smoker pellets or wood
Instructions
- Using your desired wood, preheat smoker to 225°
- Remove the silver skin from the underside of the rib rack
- Remove any large chunks of fat
- Rub both sides liberally with your seasoning of choice
- Once the smoker is ready, drop the ribs in there. If you are using a thermometer, insert the probe between 2 bones in the thicker part of the rack.
- I used a mop type sauce. Applied some about once per hour.
- The finished temp should be between 190° to 205°, about 6 hours.
