St Louis Ribs

These are my favorite type of ribs. They are much meatier than back ribs and have more delicious pork flavor.

Equipment

Ingredients

  • 1 Rack Pork Ribs St Louis style (center cut spare ribs)
  • 4 tbsp BBQ Rub
  • 4 tbsp BBQ Sauce
  • Smoker pellets or wood

Instructions

  • Using your desired wood, preheat smoker to 225°
  • Remove the silver skin from the underside of the rib rack
    Remove silver skin
  • Remove any large chunks of fat
    Excessive fat removed
  • Rub both sides liberally with your seasoning of choice
    Seasoned
  • Once the smoker is ready, drop the ribs in there. If you are using a thermometer, insert the probe between 2 bones in the thicker part of the rack.
    On the smoker
  • I used a mop type sauce. Applied some about once per hour.
  • The finished temp should be between 190° to 205°, about 6 hours.
