Preheat the pot and melt the butter
Clean the leeks and chop, add to pot
Sautee the leeks until the start to carmalize
Chop and add the garlic
Add a small portion of the chicken stock and scrape the pot to deglaze
Peel and roughly chop the potatoes, add to pot
Add the rest of the stock
Add the thyme
Bring to a gentle boil and simmer for about 30 minutes
If you plan to top the bacon, cook that while the soup simmers
When the potatoes are soft, blend the soup
Add salt and pepper to taste
Serve with bacon on top and chives or green onions
