Instant Pot Goulash

Equipment

Ingredients

  • 1½ lb Beef Chuck
  • 1 Onion
  • 2 tbsp Tomato Paste
  • 1 tbsp fish sauce
  • 3 clove Garlic
  • 3 tbsp Paprika Hungarian sweet
  • 1 tbsp Paprika Hot (optional)
  • 2 Bay Leaf
  • 1 cup Instant Mashed Potato flakes
  • 7 cup Chicken Broth
  • 1 tbsp Butter
  • 1 tbsp Oil high smoke point such as avocado
  • 1 package Egg Noodles Widest available
  • 1 cup Sour Cream topping
  • salt to taste

Instructions

  • Set the instant pot to sautee normal
  • Dice the onion

  • When the pot gets hot, add the butter and coat the bottom
  • Add the onion and stir periodically

  • Put your pan on the stove and set the heat to medium high
  • Cut the meat into managable pieces

  • Liberally salt and pepper both sides

  • Add your high heat oil to the pan
  • Place Beef in the pan and brown both sides (about 4-5 min per side)

  • When the onion is thoroughly brown, add a bit of water, stir well, lower the heat

  • Add paprika to the onions in the instant pot

  • Smash and dice garlic, add to instant pot
  • When both sides of the beef are cooked, put on a plate to rest.
  • Deglaze the pan with broth and pour into the pot
  • Cut the beef into bite sized pieces and add to pot

  • Add bay leaves, fish sauce, and tomato paste to the pot and stir
  • Fasten the lid and set to cook 35 min, high pressure
  • When the timer is up, wait an additional 15 minutes before opening
  • Add the potato flakes and stir to thicken, salt and pepper to taste
  • Serve over egg noodles (cooked according to package instructions) with sour cream mixed in

Notes

I chose to sear the beef in a pan while the onions brown in the instant pot to save some time. It can all be done in the pot. Brown the beef first, then remove and do the onions.
I like to add lots of hot paprika, but small children may not.
This could also be made in a pot on the stove. Simply simmer on low for about 2 hours or until the beef is the desired tenderness. Don't allow it to boil.
